Job Description:
Location: Brown Deer (until transition to new prep kitchen)

Schedule: Monday - Friday, 7 AM - 4 PM
Starting Salary: $45,000 + bonus for first 3 months
Raise Potential: Up to 20% after 3 months, then up to 5%
annually
About Smokin' Jack's BBQ:
Smokin' Jack's BBQ is looking for a Culinary Program Manager to
lead our smoking, prep, and catering operations. If you have a
passion for BBQ, strong leadership skills, and the ability to scale
a catering operation, we want you on our team!
Key Responsibilities:
Oversee Meat Smoking & Distribution: Manage the smoking process at
our central location and coordinate shipments to all locations.
Prep & Load-In Management: Create and maintain prep lists and
prepare daily load-ins for all locations.
Catering Program Development: Utilize culinary expertise to build
and expand our catering departmentefficiently.
Food Cost & Inventory Control: Create invoices, track inventory,
and maintain food cost efficiency at all locations.
Compliance & Food Safety: Follow Crovac packaging policies,
implement a recall procedure by logging all meats and box numbers,
and properly label each meat with its correct box and order
number.
Deep Cleaning & Maintenance: Establish and enforce deep cleaning
schedules for kitchen operations.
Smoke Scheduling: Develop and maintain an efficient smoking
schedule to ensure consistent product availability.
Qualifications:
Experience in culinary management, catering, or BBQ operations.
Strong organizational and leadership skills.
Knowledge of food safety, compliance, and recall procedures.
Ability to manage invoices, inventory, and food costs
effectively.
Experience in scaling a catering program and executing large-scale
food production.
Detail-oriented with excellent record-keeping skills.
